ORIGINS

A FOCUS ON QUALITY
Planting
Great care was taken from the onset in identifying the best terroir and microclimate to establish our crops. The ideal varieties were selected after a testing phase of over a decade. All coffee crops are also protected by indigenous service trees and shading.
Harvesting
For exceptional specialty coffee, sorting during harvesting and processing is of the utmost importance. Even a few low-quality or defective beans can reduce the quality of an otherwise excellent lot. While our use of drip irrigation makes it possible to have many harvests per year, our stringent picking process only allows for the best cherries to be selected.
Processing
We carefully select and collect the best cherries, which are de-pulped the same day, and place them in water baths to extract the coffee beans. After this first stage, the parchments are submerged in water for fermentation and are then dried naturally under the sun, allowing the beans to preserve their aromatic quality. This allows them to develop notes of lemon, ganache and praline. We also offer customized and specialized processes, such as 24-hour bean fermentation, red and white honey and cold process with slow maturation.

OUR ESTATES
Terrazas del Pisque
Located a few miles away from the capital city of Quito, Terrazas del Pisque is probably one of the few projects in the world at an altitude of 2,200 meters above sea level. Varieties produced include Typica, Bourbon, Java, Yellow Caturra, Pacamara and Maragogype. First productions will be available as blends and single variety micro lots.
Las Tolas
With an altitude of around 1,700 meters above sea level, Las Tolas is located in the Andean Choco rainforest, one of the 7 biodiversity hotspots on the planet. The estate has a unique range of varieties, from Caturra to Pacamara, and modest amounts of Java and Bourbon. It also boasts a special microclimate combining 2.500mm of annual rainfall with optimal light year round. All shade grown, its coffees are bright in acidity with rich body and complex floral aromas.
